Turkish Eggs with Sourdough Toast
Warm, cozy, flavorful.
This Mediterranean favorite is simple, comforting, and packed with flavor. Serve it with good sourdough for dipping, and you’ve got breakfast (or brunch) perfected.
Ingredients:
Wilcox Eggs
Plain Greek Yogurt
Garlic
Good Olive Oil
Red Pepper Flakes
Salt and Pepper
Sourdough Bread
In a small bowl, mix Greek yogurt with finely grated or minced garlic, a drizzle of olive oil, red pepper flakes, and a pinch of salt. Stir until smooth, then let it sit at room temperature.
In a pan of gently simmering water, poach the eggs until the whites are set and the yolks are still runny.
While the eggs cook, toast slices of sourdough bread.
Spread the garlicky yogurt onto a plate or shallow bowl.
Place the poached eggs on top of the yogurt and sprinkle with salt and pepper.
Serve with sourdough toast for dipping.
