- 1 Tbsp vegetable oil
- 1 Cup broccoli flowerets
- 1 Medium carrot, shredded (1/2 cup)
- 1 Medium onion, shredded (1/2 cup)
- 4 Large or Jumbo ‘WILCOX’ eggs
- ¼ Cup milk
- 1 Tbsp chopped parsley
- ¼ Tsp salt
- ¼ Tsp hot sauce (optional) to taste
- 1 Cup Shredded Cheddar Cheese (4 oz.)
- 1 Tbsp grated Parmesan Cheese
Cook Broccoli, Carrot, & Onion in oil over medium heat for about 5 minutes stirring often until tender-crisp (al-dente).
Beat eggs, milk, parsley, salt & hot sauce until blended. Pour over vegetables, sprinkle with cheeses & reduce heat to low.
Cover & cook about 10 minutes or until eggs are set in center.
